Chore: Add thoughts on multiplatform UI

This commit adds a new `ThoughtsTodo.md` file to track potential future considerations:

- Adds a note to explore the possibility of using a multiplatform UI approach.
- Mentions that the current method might work for Desktop and Android but may require a different approach for iOS.
