chore(deps): bump esbuild and ts-jest in /packages/core

Removes [esbuild](https://github.com/evanw/esbuild). It's no longer used after updating ancestor dependency [ts-jest](https://github.com/kulshekhar/ts-jest). These dependencies need to be updated together.


Removes `esbuild`

Updates `ts-jest` from 27.1.3 to 27.1.5
