This PR initializes the Ever Docs Platform using Docusaurus and customizes it for Ever Platform.

Changes

• Initialized Docusaurus in ever-docs repository.
• Copied structure from docs.everdemand.co.
• Removed irrelevant content.
• Updated branding (logo, subtitle, main focus).
• Set up homepage with Ever Platform branding.
• Updated dependencies to the latest versions.
