UIMA commands are found in behemoth-uima.job.

usage: com.digitalpebble.behemoth.uima.UIMADriver <in> <out> <path_pear_file>
<in>                  Input path on HDFS
<out>                 Output path on HDFS
<path_pear_file>      The path on HDFS to the UIMA .pear file containing the application.

This command processes the Behemoth corpus using a UIMA application contained in a .pear file.
