History always auto-checked [X] upon reboot

Hi - I like my graph clean and simple -- only the current reading. Currently, that setting in the chart doesn't appear to survive a reboot. Possible to make this setting "sticky" so that it stays that way until I change it?

No, I keep it so. Most people don't reboot every often and it takes only two taps to uncheck "History".
The only difficulty could be that you forgot how to do that. That is exactly the reason why it shouldn't survive reboot: Someone can uncheck "Stream" and forget how to check it again.
