I was trying to follow the instructions and made all the changes and started the cassandra. I have also stared the all-in-one jaeger on the same host where port 6831 UDP is active but I didn't see any traces going to jaeger.

Could you please post detailed documentation of how to configure a test setup..etc?

I believe https://github.com/infracloudio/cassandra-jaeger-tracing/blob/master/README.md convers all that you should know. Note that your Cassandra traces must be triggered by it's clients.
