Hello everyone, I have the problem that the RDZ has poor reception.. I would slow down the scanner time to 2 seconds.. unfortunately I can't get to the settings menu... you can also call the compass roses somehow. if so how...

or where can I find a setting for an RF gain

Are you sure that RF gain is the issue?
Can you double-check that your oscilator is correct, and do the RX frequency offset calibration first.
Look here: https://github.com/dl9rdz/rdz_ttgo_sonde/wiki/Receiver-configuration

You may check the freq. offset on LCD screen or on http://rdzsonde.local/live.json webpage,
where "afc" value represent the real frequency receprion error for specific radiosonde.

In my case, in an urban environment with a lot of RFI interference,
an additional RF1419D based antenna bandpass filter greatly improved the range of my TTGO.
I can now reliably thank probes even over 300 km away.
