The Motivation

For users having a touchscreen, is there a way to call FlyPie menus without using keyboard but using gestures/tapping on the touchscreen?

Hi there! Not really (apart from the touch buttons which you know, I guess). On X11, you could create something using other apps (for instance touchegg). On Wayland this is way more difficult. There is this extension which could do the trick, but it does not yet support custom shortcuts. There is a corresponding feature request open: harshadgavali/gnome-gesture-improvements#3. Maybe we could encourage the author to add this feature 😄
