Is it possible to install in OEM mode? I do not see the option in the GRUB menu.

Apologies , I figured it out, one needs to edit the boot options by pressing 'e' and then to add the option oem-config/enable=true somewhere before the -- to get it to actually boot into OEM install mode. If there is another way please let me know.
