Our build pipelines have started to fail recently due to the macOS-12 image being deprecated: example run.

The error message has a link to this GitHub issue: actions/runner-images#10721, which suggests we've reached the unsupported date of 2025-01-13 for ADO.

These should probably be updated to macos-latest
